Rich Troiani has been hired to oversee operations at two Seattle restaurants: Waterfront at Pier 70 and a new venture by Paul Mackay: Chez Gus. Troiani is a managing partner of the restaurants. Most recently, Troiani managed the opening of Portland's El Gaucho. He also worked in management for Kimpton Restaurant Group. Chez Gus opens this week at Pier 70. Mackay described it as a "neighborhood gathering spot" that will feature burgers, ribs, steaks and other "comfort foods." It will be open for breakfast, lunch and dinner, seven days a week.
